In 1917 Elmer McCollum & Nina Simmonds at UW discovered what came to be known as Vitamin B. That same year, Edwin B. Hart and Harry Steenbock at UW confirmed the cause of goiter to be a deficiency in iodine in the diet. In 1939, Hart & associates developed a process to stabilize iodine added to salt. Dave Nelson of the Wisconsin Science Museum shares insights into the researchers, their research, their controversies, and the implications on human health over the past 100 years.
